Organic Cacao Paste
Great Taste Awards Winner 2017: 1 Star Award.
Great Taste Judges' Comments:
"There's a lovely fruity cacao aroma here. On the palate, there's a remarkable complexity with nutty, earthy, fruity notes. Remarkable length and interest. A great ingredient."
"Rich and pure, the cacao starts to melt and there is a big depth of pure cocoa - a little clean astringency then rich layers of cacao which keeps developing. A very good and pure ingredient."
"Uniform and mouth-sized buttons of cacao. Chocolate and citrus on the nose."
Organic Cacao Paste
Sevenhills Wholefoods source their beans from tropical climates in South America, and only those of a premium variety, Criollo. The Theobroma cacao tree is sacred amongst the Mayans and Aztecs. Its fruit, the Cacao bean, is well-known as the basic ingredient in chocolate and has for centuries been forefront in native diets.
The seed pods of the Cacao bean are harvested and hand-washed, before being dried and roasted. They are then broken into small pieces (nibs) which are ground slowly to form a smooth cacao paste. We then cool our paste in moulds to solidify as 'wafers'.
- Cacao beans contain over 300 active substances, including phenyl, ethylamine and serotine.
- Contains essential minerals.

Cacao paste wafers are great as a snack, yet they can also be used as a healthy replacement for normal chocolate in baking recipes. Sevenhills Wholefoods recommends consuming up to 20g per day.
I really like the cocoa paste, it is easy to work with, tastes good and is visually appealing - the chocolate created with this paste has a really nice shine (when not heated too much). I only did miss a fair trade logo, I think there used to be one a few years ago - not sure what happened there.
