If you’re looking for a fun, nourishing treat that looks as good as it tastes, these Frozen Superfood Cacao Yoghurt Bites are the perfect recipe to try. They combine rich, velvety organic cacao paste with naturally sweet dates, crunchy pumpkin seeds, and tangy goji berries, all layered with vibrant superfood yoghurt. The result is a colourful, nutritious snack that feels indulgent but is full of goodness.
The creamy yoghurt is split into two beautiful layers: one mixed with organic pitaya powder for a bright pink hue, and the other blended with organic beetroot powder for a deep ruby tone. Once frozen, each bite has a satisfying chocolate shell with a creamy, fruity centre.
Ingredients
- 1 cup melted organic cacao paste
- 1/2 cup dates
- 1/4 cup organic pumpkin seeds
- 1/4 cup organic goji berries
- 2 cups Greek yoghurt
- 2 heaped teaspoons organic pitaya powder
- 2 heaped teaspoons organic beetroot powder
Method
- Start by coating the base of silicone moulds with a layer of melted cacao paste. Tear the dates into small pieces and place them on top of the chocolate base. Drizzle over a little more melted cacao paste, then sprinkle with pumpkin seeds and goji berries for crunch and texture.
- In two separate bowls, mix the pitaya powder into one cup of yoghurt and the beetroot powder into the other cup until smooth and evenly coloured. Spoon the yoghurt mixtures into the moulds, layering as desired. Finish with a light sprinkle of pitaya powder and an extra drizzle of melted cacao paste over the top.
- Place the moulds in the freezer for around one hour, or until fully set. Once frozen, remove from the moulds and enjoy straight from the freezer for the perfect refreshing, chocolatey bite.
