Christmas Tree Matcha Blondies
Say hello to your new favourite festive bake! These Christmas Tree Matcha Blondies are soft, sweet, and full of nourishing ingredients. They’re naturally gluten-free, rich in antioxidants thanks to Organic Classic Matcha, and boosted with vitamins and essential fatty acids from their Organic Coconut Flour and Organic Hemp Seeds.

Ingredients
For the Blondies
- 1 cup Organic Coconut Flour
- 1 cup oat flour
- ½ cup Organic Hemp Seeds
- ¼ cup Organic Classic Matcha
- ½ tsp baking powder
- ½ tsp bicarbonate of soda
- 1 egg (flax or regular)
- 2 tsp vanilla bean paste
- 1 cup maple syrup
- ¼ cup melted coconut oil
- ⅓ cup tahini
- 2 tbsp soy milk
For the Frosting
- 1 cup thick coconut yoghurt
- 1 tbsp maple syrup
- 1 tsp cinnamon
Method
1. Make the Blondies
- Preheat your oven to 170°C (fan) and line a baking tin.
- Combine all blondie ingredients in a bowl and mix until you have a smooth, even batter.
- Pour the mixture into the lined tin and spread it out evenly.
- Bake for 35 minutes, or until set and lightly golden.
2. Frost & Decorate
- Stir together the coconut yoghurt, maple syrup, and cinnamon to make the frosting.
- Once the blondies are completely cool, pipe or spread the frosting on top.
- Decorate with festive sprinkles, dried fruit, or anything Christmas-themed!
