This vibrant, nutrient-packed salad is pure good mood food. The creamy green dressing features our Organic Super Greens Blend, a powerhouse of chlorella, spirulina, wheatgrass, and barley grass — packed with vitamins, minerals, and mood-supporting amino acids like tryptophan and tyrosine.
Served with roasted butternut squash, quinoa, and avocado, it’s hearty, delicious, and perfect for lunch or a light dinner.
🌿 Ingredients (Serves 4)
Salad:
- 25g pumpkin seeds, toasted
- 50g curly kale, stalks removed, chopped
- 200g butternut squash, peeled, cubed
- 1 small red onion, sliced
- 1 avocado, sliced
- 8 pitted olives, chopped
- 300g pre-cooked Sevenhills Wholefoods Organic Royal Quinoa
- 15g Sevenhills Wholefoods Organic Goji Berries
- ½ tsp maple syrup or honey
- Salt & pepper
- Red wine vinegar
Dressing:
- 20g fresh basil
- 1 garlic clove
- 2 tbsp tahini
- 6 tbsp plain yogurt
- 2 tbsp agave or maple syrup
- 1 tsp Sevenhills Wholefoods Organic Super Greens Blend
- Juice of ½ a lemon
🥄 Method
1. Preheat & quick-pickle onions
Preheat the oven to 220°C / 200°C fan.
Place the red onion slices in a bowl, cover with red wine vinegar, a pinch of salt, and ½ tsp maple syrup or honey. Set aside to pickle.
2. Make the dressing
Blend all dressing ingredients in a blender until smooth. Add a little extra lemon juice if it needs thinning.
3. Roast the butternut squash
Toss the squash cubes with a drizzle of olive oil on a baking tray. Roast for ~25 minutes until tender. Allow to cool completely.
4. Prepare quinoa
Cook the quinoa according to packet instructions. Remove from heat and let it cool. (Tip: both the squash and quinoa can be prepared a day ahead.)
5. Massage the kale
In a large mixing bowl, add the chopped kale and a squeeze of lemon juice. Massage with your hands until the leaves soften.
6. Assemble the salad
Add the cooled quinoa, roasted squash, olives, toasted pumpkin seeds, and goji berries. Season with salt and pepper, then pour over the green dressing and mix gently.
7. Add final touches
Layer with avocado slices and pickled red onions. Finish with an extra squeeze of lemon juice.
