Wow, this is a revelation!Having read about purple yam, or ube, for a while and often seen it described as both delicious and a “superfood”, I was really curious to try the powder for myself. I certainly wasn't disappointed. When I opened the packet, I was greeted with a lovely warm, vanilla-like aroma with a slightly nutty sweetness. It wasn't overpowering at all — quite mild, sweet and inviting. The colour of the powder was also exactly as shown in the listing: a soft, plum-like purple that becomes much more vibrant when mixed with liquid. With that beautiful purple colour firmly in my mind, I decided to experiment and make a batch of ube and plum cheesecake brownies, using the ube powder and plum jam in place of the cocoa powder and chocolate chips. They turned out brilliantly and smelled absolutely delicious while cooking. There was one surprise, though! Being completely new to using ube powder, I hadn't realised that the colour could change during cooking, particularly when combined with an acidic ingredient such as the plum jam. The lovely vibrant purple mixture turned into a much softer brown colour in the oven, so I was initially a little disappointed. That disappointment didn't last long once I tasted them, though — they were delicious! The ube worked beautifully with the plum flavour, and I will definitely be experimenting with that combination again. The 100g packet should also go a surprisingly long way, as you don't need a huge amount to add plenty of flavour and colour to desserts, lattes or smoothies. I can already see so many recipes that could be adapted to use ube, and I am determined to find a way to retain more of that gorgeous purple colour next time.My daughter also swirled some into Greek yoghurt and topped it with fresh fruit, which looked absolutely amazing. It was a really simple way to use it and showed just how versatile the powder can be.Without doubt, we will be buying more when this packet runs out. I have really enjoyed experimenting with it, and the flavour is genuinely delicious.
